I just finished rewatching the "Pride & Prejudice" miniseries so I'm feeling all mushy. I always forget just how perfect and wonderful that adaptation is. The facial expressions alone. The best rewatch. And now I need to see what Netflix had in terms of Jane Austen - I need to watch "Emma" "Northanger Abbey" and "Mansfield Park" to finish my Jane Austen month. I don't like "Emma" with Gwynneth Paltrow so I'm really hoping to the miniseries.

I had a productive morning since I finally heard back from my Uni boss about questions for upcoming semester. That meant that I could finalize all my syllabi and finish up setting up all the websites. So that's done. I think tomorrow I will start prepping the first reading.

The weather is so nice and warm today. I took a walk since I was craving a chicken cutlet sandwich from the local deli - they make it so well. I also got a pork bun from the Chinese bakery for Bear since he loves it and I get it occasionally as a treat for him. I don't eat pork myself but I do like buns from Chinese bakery - it's the sweet dough.

Soup Project 2014: Soup 2 - Creamy Sweet Potato Soup

Ingredients

2 Tbsp canola oil
1 large sweet onion, sliced
2 tsp ground cumin
3 sweet potatoes, peeled and cubed
1 1/2 qt chicken broth (I used water)
1 3/4 cup plain yogurt
2 Tbsp chopped parsley or cilantro
1/4 cup toasted pumpkin seeds

Directions
1. In a soup pot heat oil. Add onions and cumin and saute 3-4 minutes. Add potatoes and chicken broth and bring to a boil. Reduce heat and simmer soup 20-25 minutes.
2. Puree soup with 1 1/2 cup of yogurt and parsley. Serve each portion of soup with a dollop of remaining yogurt and sprinkled pumpkin seeds.

Thoughts on Soup:
My mother-in-law gave me this recipe a while ago and now that I have my blender I could finally try it out. And it is pretty simple, which I like. This came out pretty well. It will last for a while too. I do think next time I'll make it, I'll use 5 cups of water instead of 6 to make it thicker. I did use water instead of chicken stock, since I don't have any chicken stock and water is just fine. I also added sour cream into a bowl at the end instead of more yogurt since I like sour cream in soup like this. And I didn't have pumpkin seeds. I did love the parsley; it added a great flavor. I do have to say I love my new blender - you just stick it in a pot and it purees super quickly.



Other than making the soup today for lunch, I made myself a delicious salad since parsley smelled so good when I was cooking. And for dinner I made lo main noodles with stir fried onion and peppers (red, yellow and orange) and I make some steak. Original plan was to make broccoli for home cooked beef and broccoli lo main, by the broccoli didn't look that good - I think it was in the fridge too long. Still it all came out nice.

Bear and I also watched a new episode of "Community" after dinner and now I'm continuing my "Pride and Prejudice" rewatch.

"Supernatural" episodes I watched today S2E16 Roadkill and S2E17 Heart - were really good. I'm really enjoying Season 2.

I worked on my history websites all morning. I taught my history classes before, so I just had to upload the back-ups but then I had to update all the dates when assignments are due and it took forever. But now they are mostly done.

I also finished "The Cuckoo's Calling" by Robert Galbraith (aka J.K. Rowling). I really enjoyed it. It was a good mystery - and while I picked up on a few clues it was a very clever resolution. The characters were interesting and the book was written with humor. Very nice book; I do recommend it.

I managed to go for a walk today after my Mom guilt tripped me into it. But she was right, I did not get out of the house since Sunday and it wasn't that terrible cold - 27F or so, still a little below freezing but manageable. I walked to a Chines supermarket to get plain yogurt for soup tomorrow and some lettuce and I also picked up lo mein noodles. And I got fries on the way home - lately I just want fries.

This school break I rewatched "Persuasion" and "Sense and Sensibility" movies so far and continuing my Jane Austen kick I started rewatching A&E's fabulous "Pride and Prejudice" miniseries. I'm going to pace myself, not just watch it all at once but it has been a while since I've opened my DVDs. I just watched the first episode tonight - so good. Colin Firth is great at sexy starring (both when he stared at Elizabeth and as we stare at him - I love him in this role). I didn't really like the Kiera Knightly movie - this miniseries is my definitive version.
