I never had meatloaf as a kid. It is not part of Russian food. I never had it as a teenager either once i came to the US, since I rarely ate out until I was much older, and when I did it was mostly pizza or Chinese. But my husband grew up with it and his mother made some once in a while. It was always just ok to me. After we got married I tried making meatloaf from an online recipe and I didn't like it too much.

That could have been it but for some reason I decided to try again. This time I looked up several recipes online (mostly on Allrecipe website) and read many review comments that gave suggestions, and sort of combined several ideas and made one. At it was so delicious! I wrote down the recipe in my Recipe book and made it many times since. It always comes out great. Even my mother liked it enough to ask how to make it - and she is very picky with food she doesn't make herself. Tanya loves making the sauce from ketchup, brown sugar and Worcestershire sauce. It makes a tasty contrast to the meat. She loves this recipe and often asks for thirds and she is a kid that doesn't eat too much. I think what makes this recipe work is also fried onions and crunchy green pepper. It's also easy to make, which is a plus.

For me this is mainly a Turkey Meatloaf recipe, since I love turkey, but I also made it with 1 lb of chicken and it worked well. Last time I used 1/2 lb beef and 1/2 lb chicken and that was also a tasty combination. I have made it with just 1 lb of beef before but I'm not a fan - I think a little poultry makes it juicier. Anyhow, here is the recipe I use:

INGREDIENTS:

1 lb of ground turkey
1 cup bread crumbs
1 onion (cut up and fried beforehand)
1 green pepper, chopped
1/2 cup milk
1 egg
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder

topping: 1/2 cup ketchup
1/4 cup brown sugar
1 tablespoon of Worcestershire sauce

METHOD:

1. Heat oven to 350 F
2. Combine turkey, bread crumbs, onion, green pepper, milk, egg, salt, pepper, and garlic powder. Mix well.
3. Put the mix into 9x5 loaf pan (or I also made it as a 9x9 square pan, which I prefer lately).
4. Bake in the oven for 30 minutes.
5. Meanwhile, mix the topping together.
6. After 30 minutes, take out the meatloaf, cover with topping and put back in the oven. Bake for another 45 minutes until thermometer reads at least 165F (I prefer 180F).
