Mmm. Fried eggplant plus pasta. I've only had it once, but I liked it when I had it. First time I had eggplant too.
Over the summer I had a "let's try new vegetables!" thing going on. It will probably manifest itself again come next spring when the farmer's market starts up again and I have access to a kitchen.
